Garlic Bread Smash Burgers (20 Minutes)

Method

  1. Mix the softened butter with the minced garlic and garlic powder, then spread it on one side of each bread slice.
  2. Heat the oil in a large skillet over medium-high heat and cook the onion for 5 minutes until soft and golden. Set aside.
  3. Divide the beef into 4 balls, season with salt and pepper, and smash each one flat in the hot skillet.
  4. Cook for 2 to 3 minutes per side until browned and cooked through. Add a cheese slice to each patty for the last minute so it melts.
  5. Toast the bread butter-side down in the same skillet for 1 to 2 minutes until golden.
  6. Build each burger with a patty, onions and burger sauce between two garlic bread slices, buttered sides out.

Chef notes

Smash the patties thin and press hard. The wide, crispy edges are what make a smash burger.

Substitutions

  • Ground beef — ground turkey or plant-based mince
  • Cheddar — American cheese or provolone
  • White bread — brioche buns, toasted

Serving suggestions

Serve with pickles and fries, or a simple green salad.

Storage

Patties keep 2 days in the fridge in an airtight container. Toast the bread fresh.

Reheating

Reheat patties in a hot skillet for 2 minutes per side. The garlic bread is best made fresh.

Equipment

  • Large skillet
  • Spatula or burger press
  • Mixing bowl

Variations

  • Double stack: use two patties per burger with extra cheese
  • Spicy: add sliced jalapeños and pepper jack

Why it works

Smashing the beef against a hot skillet creates maximum contact, so the patty browns fast and stays juicy inside.

Frequently asked questions

Why smash the burger patties?

Smashing presses the beef flat against the hot pan, giving it crispy browned edges and a juicier centre than a thick patty.

Can I use regular sandwich bread?

Yes, but thick-cut bread or Texas toast holds up better. Thin bread can go soggy under the patty.
