Crispy Beef Tacos with Cilantro Lime Sauce (20 Minutes)
Crisp tortillas, smoky seasoned beef, melted cheese and a cool cilantro lime sauce — a viral-style taco night ready in 20 minutes.
Method
- Heat the olive oil in a large skillet over medium-high heat, then cook the onion for 2 minutes until softened.
- Add the ground beef and cook for 4 to 5 minutes, breaking it up, until browned. Stir in the garlic, chilli powder, cumin, smoked paprika, oregano, salt and pepper and cook for 1 minute.
- Stir in the tomato paste and water and simmer for 2 minutes, until the beef is saucy but not wet.
- Meanwhile, whisk the sour cream, cilantro and lime juice together with a pinch of salt to make the cilantro lime sauce.
- Lay the tortillas flat and fill one half of each with beef and cheese. Fold in half and press gently.
- Wipe the skillet clean, return it to medium heat, and cook the folded tacos for 2 minutes per side, until golden and crisp.
- Open each taco slightly, add lettuce and tomato, drizzle with cilantro lime sauce and serve with lime wedges.

Chef notes
Keep the beef filling on the drier side so the tortillas stay crisp. If a tortilla cracks, warm it for 10 seconds in the dry skillet before filling.
Substitutions
- Ground beef — ground turkey or plant-based mince
- Flour tortillas — corn tortillas, warmed first so they do not crack
- Sour cream — Greek yoghurt
- Cheddar cheese — Monterey Jack or a Mexican cheese blend
Serving suggestions
Serve with lime wedges, extra cilantro lime sauce for dipping, and a simple cabbage slaw.
Storage
Store the beef filling and sauce separately in airtight containers in the fridge for up to 3 days. Assemble and crisp the tacos just before serving.
Reheating
Reheat the filling in a skillet over medium heat for 3 minutes. Crisp assembled tacos in a dry skillet for 2 minutes per side.
Equipment
- Large skillet
- Spatula
- Small bowl
- Whisk
Variations
- Spicy: add 1 diced jalapeño with the onion and a pinch of chilli flakes
- Cheesy crunch: add an extra handful of cheese to the outside of each tortilla before crisping
- Breakfast taco: swap the beef for scrambled eggs and add hot sauce
Why it works
A dry, well-seasoned filling and a hot, dry skillet crisp the tortilla without steaming it, while the cool sour cream sauce balances the smoky beef.
Frequently asked questions
Why are my tacos not staying crisp?
The filling was too wet or the pan was too cool. Simmer the beef until saucy but not runny, and cook the folded tacos in a properly hot, dry skillet.
Can I make the cilantro lime sauce ahead?
Yes, it keeps for up to 3 days in an airtight container in the fridge.
