Viral Steak Spud (Loaded Baked Potato in 20 Minutes)
Fluffy microwave jacket potato loaded with seared steak strips, melted cheese, sour cream and chives. The viral TikTok steak spud, on the table in 20 minutes.
Method
- Scrub the potatoes, prick them all over with a fork and microwave on full power for 10 minutes, turning once, until soft all the way through.
- Meanwhile, pat the steaks dry, season with salt and pepper and rub with the olive oil.
- Heat a heavy frying pan over high heat until very hot, then sear the steaks for 2 to 3 minutes per side for medium-rare, or a minute longer per side for medium.
- Rest the steaks for 3 minutes, then slice thinly against the grain.
- Split each potato open, fluff the inside with a fork and add the butter and half the cheese so it melts into the flesh.
- Top with the sliced steak, the remaining cheese, sour cream, chives and garlic or chilli butter, if using, and serve at once.
Microwave times are for a 1,000 W microwave, the usual US size. In an 800 W microwave (common in the UK and Europe) add about a quarter more time; at 1,200 W check a little early.

Chef notes
A dry steak surface sears better than a damp one, so pat it well before seasoning. Resting keeps the juices in the meat instead of on the board.
Substitutions
- Rump or sirloin steak — minute steak, sliced chicken breast, or sliced mushrooms for a meat-free version
- Cheddar cheese — grated mozzarella or crumbled feta
- Sour cream — Greek yogurt
Serving suggestions
Serve with a simple green salad or pickled red onion for contrast.
Storage
Store the potato and steak separately in airtight containers in the fridge for up to 2 days.
Reheating
Reheat the potato in the microwave for 2 minutes and warm the steak gently in a pan for 1 minute; add fresh toppings after reheating.
Equipment
- Microwave
- Heavy frying pan
- Fork
- Sharp knife
Variations
- Chilli butter: stir chilli flakes into softened butter before spooning over the steak
- BBQ: brush the steak with barbecue sauce in the last minute of cooking
- Cheese sauce: swap grated cheese for warm cheese sauce poured over the top
Why it works
Microwaving cooks the potato from the inside out, giving a fluffy centre in minutes, while a very hot pan browns the steak quickly without overcooking it. Butter and cheese melt into the hot potato, so every bite carries the topping.
Frequently asked questions
How do I know the potato is cooked?
It is cooked when a knife slides into the centre with no resistance and the skin gives slightly when squeezed.
Can I bake the potato in the oven instead?
Yes. Bake at 400°F (200°C, gas 6) for about 60 minutes, but the total time will be longer than the 20 minutes in this recipe.
