Microwave Kalakand (Diwali Sweet in 20 Minutes)
Soft, grainy kalakand made in the microwave with ricotta and condensed milk — no long stirring over the stove. A classic Diwali sweet, ready in 20 minutes.
Method
- Line an 8x8-inch baking dish with parchment paper, leaving overhang on two sides for lifting.
- Whisk the ricotta, condensed milk, milk powder and cardamom in a large microwave-safe bowl until completely smooth.
- Microwave on high for 5 minutes, then stir well, scraping the bottom and sides.
- Microwave for 4 minutes more, then stir again. The mixture thickens and starts to pull slightly from the sides.
- Continue in 2-minute bursts (about 3 to 4 minutes total), stirring between each, until the mixture looks grainy and leaves the sides of the bowl as one mass.
- Stir in the rose water if using, then spread into the lined dish and smooth the top. Scatter the pistachios over it and press lightly.
- Cool to room temperature, then refrigerate at least 2 hours before lifting out and cutting into 12 squares.
Microwave times are for a 1,000 W microwave, the usual US size. In an 800 W microwave (common in the UK and Europe) add about a quarter more time; at 1,200 W check a little early.

Chef notes
The stopping point is visual: the mixture turns from glossy and pourable to grainy and pulls away from the bowl. A minute too little and it will not set; a minute too much and it dries out.
Substitutions
- Ricotta — fresh crumbled paneer, blended smooth
- Rose water — 1/4 teaspoon kewra water, or skip it
- Pistachios — chopped almonds or dried rose petals
Serving suggestions
Serve chilled on a Diwali sweets platter with chai, or box up squares as gifts.
Storage
Airtight container in the fridge for up to 5 days.
Reheating
Served cold or at room temperature; no reheating needed.
Equipment
- Large microwave-safe bowl
- Whisk
- Spatula
- 8x8-inch baking dish
- Parchment paper
Variations
- Chocolate kalakand: whisk in 2 tablespoons cocoa powder before microwaving
- Mango kalakand: stir 1/4 cup mango pulp into the mixture after cooking
Why it works
Condensed milk and milk powder supply the concentrated milk solids that kalakand needs, so the microwave only has to drive off the ricotta's water — the same evaporation the stove does, without an hour of stirring.
Frequently asked questions
Why is my kalakand soft and not holding its shape?
It needed more microwave time. Cook it in 1-minute bursts, stirring each time, until it pulls away from the sides of the bowl as one mass.
Can I make kalakand without a microwave?
Yes. Simmer the same mixture on the stove over medium-low heat, stirring often, until it thickens and turns grainy — about 30 to 35 minutes.
