Rose Pistachio White Chocolate Fudge (15 Minutes)
Creamy no-bake white chocolate fudge with rose water, cardamom and toasted pistachios — 15 minutes active, then chill 4 hours to set. A Diwali sweet.
Method
- Line an 8-inch square pan with parchment paper, leaving overhang on two sides for easy lifting.
- Combine the white chocolate chips, sweetened condensed milk and butter in a medium saucepan over low heat. Stir constantly until melted and completely smooth, 4 to 5 minutes. Do not let it boil.
- Take the pan off the heat. Stir in the rose water, cardamom and salt, then fold in half of the chopped pistachios.
- Scrape the mixture into the lined pan and smooth the top. Sprinkle evenly with the remaining pistachios and the dried rose petals, pressing gently so they stick.
- Chill for at least 4 hours, until completely firm. Lift out of the pan and cut into 24 squares.

Chef notes
Low heat is the whole trick: white chocolate scorches easily, so keep the heat gentle and stir the whole time. If the mixture looks oily, it got too hot — whisk in 1 tablespoon of warm milk to bring it back together.
Substitutions
- White chocolate chips — chopped white chocolate bar (same weight)
- Rose water — 1/2 teaspoon rose essence, or 1 teaspoon vanilla extract for a plain version
- Ground cardamom — 1/4 teaspoon ground cinnamon
- Toasted pistachios — toasted chopped almonds
- Dried rose petals — skip, or use freeze-dried raspberries for colour
Serving suggestions
Serve chilled on a Diwali sweets platter, or box the squares in parchment-lined tins as an edible gift.
Storage
Keep in an airtight container in the fridge for up to 2 weeks, with parchment between layers.
Reheating
Not reheated — serve chilled or at cool room temperature. Let stand 10 minutes out of the fridge before serving.
Equipment
- 8-inch square baking pan
- Parchment paper
- Medium saucepan
- Spatula
Variations
- Saffron: steep a pinch of saffron threads in 1 tablespoon warm milk for 10 minutes and stir in with the rose water
- Dark chocolate swirl: melt 1/2 cup dark chocolate chips separately and swirl through the mixture before chilling
- Coconut: fold in 1/3 cup desiccated coconut with the pistachios
Why it works
Sweetened condensed milk is already thick and sweet, so melting it with white chocolate gives a firm-setting fudge with no thermometer and no sugar boiling. Cardamom and rose water dissolve straight into the warm mixture, flavouring every square evenly.
Frequently asked questions
How long does the fudge take to set?
At least 4 hours in the fridge, or overnight for the firmest cut. The active work is only 15 minutes.
Why is my fudge oily or grainy?
The mixture got too hot. White chocolate scorches over anything above low heat, so melt it gently and stir constantly; whisk in 1 tablespoon of warm milk to rescue a split batch.
Can I make it ahead for Diwali?
Yes. It keeps up to 2 weeks in an airtight container in the fridge, so make it days before the festival.
