  1. Put the basil seeds in a small bowl with the water and leave for 5 minutes, until they swell into a soft gel.
  2. Pour the cold milk and rose syrup into a jug and whisk until the syrup dissolves and the milk turns blush pink.
  3. Add the soaked basil seeds and stir through.
  4. Fill two glasses with ice, pour over the rose milk and sprinkle with rose petals.

Chef notes

Whisk the syrup in while the milk is very cold; it dissolves more cleanly and the drink looks silkier.

Substitutions

  • Rose syrup — grenadine, for a fruitier red drink
  • Whole milk — oat milk or almond milk, for dairy-free
  • Basil seeds — chia seeds, soaked the same way

Serving suggestions

Serve in tall glasses with ice alongside spicy chaat or as an iftar refresher.

Storage

Refrigerate for up to 1 day; stir before serving as the seeds settle.

Reheating

Serve chilled only; do not heat.

Equipment

  • Jug or pitcher
  • Whisk
  • Small bowl
  • Tall glasses

Variations

  • Malai top: chill the rose milk, then spoon a thin layer of clotted cream on top
  • Falooda light: add 1/2 cup cooked vermicelli and a scoop of vanilla ice cream

Why it works

Rose syrup is sugar-based, so it sweetens and flavours in one pour. Basil seeds swell into a soft gel that thickens the drink and gives the classic street-vendor texture.

Frequently asked questions

What can I use instead of Rooh Afza?

Any rose syrup made for drinks works; grenadine is the closest easy substitute, though the flavour is fruitier than floral.

Why are my basil seeds still hard?

They needed the full 5 minutes in water. Stir them halfway; under-soaked seeds stay crunchy and never gel.
