No-Bake Date and Nut Bites (15 Minutes)

Method

  1. Pulse the nuts in a food processor until roughly chopped, then add the dates, cocoa, cardamom and salt and blend until the mixture comes together as a sticky dough.
  2. Drizzle in the melted ghee and pulse a few more times until the dough holds when squeezed.
  3. Scoop tablespoonfuls and roll between your palms into 18 smooth balls.
  4. Roll each ball in the desiccated coconut, pressing lightly so it sticks.
  5. Press a pistachio half on top of each bite and serve.

Chef notes

If the dough feels crumbly, the dates were dry — add 1 teaspoon of warm water at a time until it holds when squeezed. Medjool dates blend far more easily than drier varieties.

Substitutions

  • Medjool dates — deglet nour dates, soaked in warm water for 10 minutes and drained
  • Ghee — coconut oil or butter
  • Cocoa powder — carob powder, 1 tablespoon, for a caffeine-free version

Serving suggestions

Pack into small paper cups in a gift box for Diwali; serve with chai or coffee.

Storage

Airtight container in the fridge for up to 2 weeks, or freeze for up to 2 months.

Reheating

No reheating needed; leave at room temperature for 10 minutes after the fridge.

Equipment

  • Food processor
  • Mixing bowl
  • Tray lined with parchment

Variations

  • Rose: add 1/2 teaspoon rose water with the ghee and roll in crushed dried rose petals instead of coconut
  • Coffee: add 1 teaspoon instant espresso powder with the cocoa

Why it works

Dates are mostly sugar and fiber, so blended dates act as both the sweetener and the glue. The nuts give structure, and cocoa and cardamom make the whole bite taste like more than the sum of its ingredients.

Frequently asked questions

My dates are hard and dry. What do I do?

Soak them in warm water for 10 minutes, drain well and pat dry before blending. The dough needs soft dates to come together.

How long do date nut bites last?
