Dubai Chocolate Strawberry Cup (20 Minutes)

Method

  1. Hull and halve the strawberries. Chop the chocolate and crush the pistachios, if not already done.
  2. Melt the butter in a skillet over medium heat. Add the kataifi and cook for 5 to 6 minutes, stirring often, until golden and crisp. Take off the heat and stir in 1/4 cup of the pistachio cream so the strands clump together.
  3. While the kataifi cools slightly, melt the chocolate with the oil in a microwave-safe bowl in 30-second bursts, stirring between each, until smooth.
  4. Divide half the strawberries among 4 small glasses or cups. Spoon over half the melted chocolate.
  5. Add a layer of the pistachio kataifi, then the remaining strawberries and chocolate.
  6. Top each cup with the remaining pistachio cream and a sprinkle of crushed pistachios. Serve right away, while the kataifi is still crisp.

Microwave times are for a 1,000 W microwave, the usual US size. In an 800 W microwave (common in the UK and Europe) add about a quarter more time; at 1,200 W check a little early.

Chef notes

Keep the kataifi crisp by assembling just before serving. If the chocolate thickens while you work, warm it for 10 seconds in the microwave and stir.

Substitutions

  • Kataifi pastry — finely shredded wheat or crushed toasted vermicelli, toasted the same way
  • Pistachio cream — almond butter mixed with 1 teaspoon honey and a drop of green food colouring, for colour only
  • Milk or dark chocolate — white chocolate, melted the same way

Serving suggestions

Serve in small clear glasses so the layers show, with extra strawberries on the side.

Storage

Best eaten fresh. Keep the components separately in airtight containers in the fridge for up to 2 days and assemble just before serving; the kataifi softens once layered.

Reheating

No reheating needed. If the chocolate has set, warm it gently in the microwave for 10 seconds at a time and stir until pourable.

Equipment

  • Skillet
  • Wooden spoon
  • Microwave-safe bowl
  • 4 small glasses or cups

Variations

  • Extra crunch: add 2 tablespoons chopped toasted hazelnuts with the crushed pistachios
  • Raspberry: swap the strawberries for raspberries and keep everything else the same
  • Chocolate lover: add a second drizzle of melted chocolate over the pistachio cream topping

Why it works

Warm chocolate coats the berries and sets just enough to hold the layers, while butter-toasted kataifi mixed with pistachio cream stays crisp against it, giving the contrast of soft, crunchy and creamy in every spoonful.

Frequently asked questions

Where do I find kataifi pastry?

Look in the freezer section of Middle Eastern or large supermarkets, near the filo pastry. Thaw it fully before toasting so it crisps evenly.

Can I make Dubai chocolate strawberry cups ahead?

Prepare the components up to 2 days ahead and store them separately, but assemble just before serving so the kataifi stays crisp.
