  4. Spread 1/2 cup marinara in the baking dish, lay down a layer of wonton wrappers, then add beef, spoonfuls of ricotta, spinach and mozzarella.

Chef notes

Overlapping the wonton wrappers slightly stops gaps in the layers, and the short rest after baking helps the slices hold their shape.

Substitutions

  • Ground beef — ground turkey, chicken or plant-based mince
  • Ricotta cheese — cottage cheese, blended smooth
  • Marinara sauce — any tomato pasta sauce
  • Wonton wrappers — fresh lasagna sheets, cut to fit

Serving suggestions

Serve with a green salad and garlic bread, or with extra marinara spooned over the top.

Storage

Store leftovers in an airtight container in the fridge for up to 3 days.

Reheating

Reheat covered in the oven at 350°F (180°C, gas 4) for 10 to 12 minutes, or microwave single portions for 1 to 2 minutes until hot throughout.

Equipment

  • Medium baking dish
  • Large pan
  • Spatula
  • Oven

Variations

  • Spicy: add 1/2 teaspoon chilli flakes to the beef
  • Veggie: replace the beef with mushrooms and extra spinach
  • Extra cheesy: add an extra 1/2 cup mozzarella between the layers

Why it works

Wonton wrappers cook faster than pasta sheets and crisp at the edges, giving the dish both the layered structure of lasagna and the texture of baked dumplings.

Frequently asked questions

Do wonton wrappers need to be cooked first for dumpling lasagna?

No, they cook in the sauce in the oven. Make sure each layer is covered with sauce so the wrappers soften evenly.

Can dumpling lasagna be made ahead?

Yes, assemble it up to a day ahead and keep it covered in the fridge. Add 5 minutes to the baking time when baking from cold.
