Burger-Stuffed Buns (25 Minutes)
Soft baked buns stuffed with juicy seasoned beef, melted cheese and pickles — a handheld burger-night favourite in 25 minutes.
Method
- Heat the oven to 375°F (190°C, gas 5) and line a baking tray with parchment paper.
- Cook the beef and onion in a skillet over medium-high heat for 5 to 6 minutes, breaking up the beef, until browned. Drain any excess fat.
- Stir in the garlic powder, onion powder, smoked paprika, salt, pepper, ketchup and mustard, then cook for 1 minute. Leave to cool for 2 minutes.
- Flatten each biscuit into a 4-inch round. Spoon beef into the centre, add cheese and 2 pickle slices, then fold the dough up and pinch firmly to seal.
- Place the sealed buns seam-side down on the tray, brush with melted butter and sprinkle with sesame seeds.
- Bake for 12 to 14 minutes, until deep golden and puffed. Rest for 2 minutes before serving.

Chef notes
Pinch the seams well and keep them underneath, or the cheese will escape in the oven. A short cooling time for the filling also stops the dough from tearing.
Substitutions
- Refrigerated biscuit dough — pizza dough, cut into 8 pieces
- Ground beef — ground turkey
- Cheddar cheese — American cheese slices, torn in half
- Dill pickles — pickled jalapeños for a spicy version
Serving suggestions
Serve with extra ketchup and mustard for dipping, plus crisps or a green salad.
Storage
Store in an airtight container in the fridge for up to 3 days.
Reheating
Reheat in a 350°F (180°C) oven for 8 minutes, or in an air fryer at 350°F (180°C) for 4 minutes, until hot through.
Equipment
- Baking tray
- Parchment paper
- Skillet
- Spatula
Variations
- Bacon cheeseburger: add 4 slices of cooked, crumbled bacon to the filling
- Double cheese: add a small cube of mozzarella inside each bun with the cheddar
- Spicy: add diced jalapeños and a dash of hot sauce to the beef
Why it works
Biscuit dough bakes into a soft, sealed pocket, so the juicy beef and melting cheese stay inside instead of sliding out like a regular burger.
Frequently asked questions
Why did my buns burst open?
The seam was not sealed or the filling was too hot. Pinch the dough firmly, place the seam underneath, and let the beef cool for 2 minutes first.
Can I freeze burger-stuffed buns?
Yes, freeze the baked, cooled buns for up to 1 month and reheat from frozen in a 350°F (180°C, gas 4) oven for 15 minutes.
