Method

  1. Heat the oven to 400°F (200°C, gas 6) and coat a 24-cup mini muffin pan generously with nonstick spray.
  2. Brown the sausage in a skillet over medium-high heat for about 8 minutes, breaking it into small crumbles, then drain off the fat really well.
  3. Whisk the pancake mix with the water until just combined, then stir in the sausage, cheddar and 1/4 cup maple syrup.
  4. Fill each mini muffin cup about three-quarters full with the batter.
  5. Bake for 12 to 15 minutes, until golden and a toothpick comes out clean.
  6. Cool 3 minutes in the pan, then turn out and serve warm with extra maple syrup for dipping.

Chef notes

Draining the sausage thoroughly is the whole trick — any leftover grease makes the bites heavy instead of fluffy. If your pancake mix is not the complete kind, add 1 egg and 1/3 cup milk with the water.

Substitutions

  • Breakfast sausage — ground turkey sausage or pork-and-maple sausage
  • Cheddar cheese — pepper jack or mozzarella
  • Complete pancake mix — your usual from-scratch pancake batter

Serving suggestions

Serve warm with maple syrup for dipping and a side of fresh fruit. They are made for brunch boards and lunchboxes.

Storage

Refrigerate in an airtight container for up to 4 days, or freeze for up to 2 months.

Reheating

Microwave for 20 to 30 seconds, or warm in a 350°F (180°C, gas 4) oven for 8 minutes.

Equipment

  • Mini muffin pan (24-cup)
  • Skillet
  • Mixing bowls

Variations

  • Bacon version: swap the sausage for 8 slices of cooked, crumbled bacon
  • Mini McGriddle sandwiches: skip the cheese, halve each bite and press a small slice of American cheese inside while warm

Why it works

The pancake batter puffs around the sausage as it bakes, and the maple syrup mixed into the batter caramelizes into little pockets of sweetness — the exact sweet-savory balance that makes a McGriddle a McGriddle.

Frequently asked questions

Can I make McGriddle bites ahead of time?

Yes — bake them, cool completely and refrigerate up to 4 days, or freeze up to 2 months, then reheat.

Why did my bites stick to the pan?

Spray the cups very generously, including the rims, and run a thin knife around each bite while they are still slightly warm.
