Chef notes

Almond extract is strong, so measure it carefully; half a teaspoon gives the Bakewell flavour without overpowering the cherries.

Substitutions

  • Fresh cherries — frozen cherries, thawed, or tinned cherries, drained
  • Milk — oat milk or almond milk
  • Maple syrup — honey or brown sugar

Serving suggestions

Serve with a spoonful of yogurt or a drizzle of cream.

Storage

Cover and keep in the fridge for up to 3 days.

Reheating

Reheat a portion in the microwave for 1 minute, adding a splash of milk if it looks dry.

Equipment

  • Small baking dish
  • Mixing bowl
  • Whisk

Variations

  • Raspberry: swap cherries for raspberries and use raspberry jam
  • Chocolate cherry: stir in 1 tablespoon chocolate chips with the oats
  • Nut-free: leave out the almonds and top with extra cherries

Why it works

Oats absorb the milk and egg as they bake, setting into a soft, sliceable cake, while almond extract and cherries recreate the Bakewell flavour without pastry.

Frequently asked questions

Can I use frozen cherries?

Yes. Thaw and drain them first so the oats do not turn soggy.

Can I make baked oats ahead?

Yes. Bake, cool and refrigerate for up to 3 days, then reheat one portion at a time.
