Viral Salad for Breakfast (10 Minutes)

Method

  1. Whisk the olive oil, lemon juice, salt and pepper in a large bowl. Add the mixed greens, cherry tomatoes and cucumber and toss until every leaf is lightly coated.
  2. Heat the frying oil in a small nonstick skillet over medium-high heat. Crack in the egg and fry for about 2 minutes, until the white is fully set and the edges are crisp but the yolk is still runny.
  3. Pile the dressed salad into a wide bowl. Fan the avocado slices over it, slide the fried egg on top and crumble over the feta. Serve right away, before the yolk cools.

Chef notes

Get the egg into the hot pan only when everything else is ready — a fried egg waits for no one. A wide, shallow bowl shows off the layers and keeps the greens from getting weighed down.

Substitutions

  • Feta cheese — goat cheese, or leave it out and add extra salt
  • Mixed greens — baby spinach, arugula or chopped romaine
  • Lemon juice — apple cider vinegar or white wine vinegar

Serving suggestions

Serve with a slice of toasted sourdough for mopping up the yolk and dressing. A sprinkle of chili flakes or everything-bagel seasoning works on top too.

Storage

Best assembled fresh. Undressed greens and cut vegetables keep separately in the fridge for 1 day; fry the egg to order.

Reheating

Not designed for reheating — this is a fresh salad. Cook the egg right before serving.

Equipment

  • Large bowl
  • Small nonstick skillet
  • Whisk
  • Knife and cutting board

Variations

  • Smoked salmon: swap the egg for 2 ounces smoked salmon ribbons
  • Greek style: add sliced Kalamata olives and swap the feta for extra

Why it works

The hot fried egg does double duty: its runny yolk becomes a rich, warm dressing that coats the cool greens, while the protein from the egg plus the fibre and fat from the avocado keep you full without a heavy cooked breakfast.

Frequently asked questions

Can I meal prep a breakfast salad?

Partly. Keep the dressed-free greens, tomatoes and cucumber in one container and the avocado separate; fry the egg and assemble right before eating.

What greens work best?

Sturdy, flavoursome greens like arugula or baby spinach hold up best under the warm egg; delicate spring mix wilts faster but still works if served immediately.
