Microwave Masala Poha (5 Minutes)

Method

  1. Rinse the poha in a colander under running water for 30 seconds, then drain well and tip into a large microwave-safe bowl. Sprinkle the water over it and let it sit for 2 minutes to soften.
  2. Stir in the oil, mustard seeds, turmeric, salt, peas and peanuts.
  3. Microwave on high for 2 minutes, stir well, then microwave 1 more minute until the peas are hot and the poha is soft and fluffy.
  4. Stir in the lemon juice and cilantro, fluff with a fork and serve hot.

Microwave times are for a 1,000 W microwave, the usual US size. In an 800 W microwave (common in the UK and Europe) add about a quarter more time; at 1,200 W check a little early.

Chef notes

Use thick poha, not thin. Thin flakes turn mushy in the microwave. If the poha looks dry after rinsing, sprinkle a little more water over it before cooking.

Substitutions

  • Mustard seeds — cumin seeds
  • Green peas — sweet corn kernels
  • Roasted peanuts — cashews, or omit

Serving suggestions

Serve hot with an extra squeeze of lemon and a small bowl of plain yogurt on the side.

Storage

Best eaten fresh. Keeps 1 day in an airtight container in the fridge.

Reheating

Sprinkle with a little water and microwave for 1 minute, then fluff with a fork.

Equipment

  • Microwave
  • Large microwave-safe bowl
  • Colander

Variations

  • Mumbai style: toss with 1/4 cup sev and finely diced onion before serving
  • Sweet-sour: add 1 tablespoon sugar with the salt

Why it works

Poha is parboiled rice pressed flat, so it is already cooked before it reaches your kitchen. It only needs rehydration, not real cooking, which is why the microwave can finish it in minutes.

Frequently asked questions

Why is my poha hard or chewy?

It needed more water or soak time. Sprinkle 2 tablespoons of water over it and microwave 1 more minute.

Can I use thin poha?

Thick poha works best; thin flakes break down and go mushy with this method.
