Method

  1. Fill a tall 16-ounce glass to the top with ice.
  2. Pour the chilled Dr Pepper over the ice, leaving about an inch of room at the top.
  3. Add the coconut syrup and lime juice, then stir gently 3 or 4 times to combine without losing the fizz.
  4. Pour the half-and-half slowly over the back of a spoon so it floats in a creamy layer, then serve right away.

Chef notes

Chill the soda can for at least 4 hours; warm soda goes flat the moment it hits the syrup. Floating the cream over the back of the spoon is what makes the marbled dirty-soda look.

Substitutions

  • Coconut syrup — vanilla syrup or almond orgeat
  • Half-and-half — coconut creamer for a dairy-free version
  • Dr Pepper — any dark soda such as cola or root beer

Serving suggestions

Serve immediately in the tall glass with a lime wedge on the rim and a wide straw.

Storage

Best served fresh. Do not store it mixed; the soda loses its carbonation within an hour.

Reheating

Not applicable; serve chilled over fresh ice.

Equipment

  • Tall 16 oz glass
  • Long spoon
  • Knife and cutting board

Variations

  • Island: use coconut cream instead of half-and-half and add a splash of pineapple juice
  • Diet: use diet Dr Pepper and sugar-free coconut syrup

Why it works

Coconut syrup gives the soda a creamy, nutty sweetness that the fat in the cream carries across the palate, while the lime juice cuts through the sugar so the drink tastes bright instead of cloying.

Frequently asked questions

What is a dirty soda?

A dirty soda is a fountain drink 'dirtied' with flavoured syrups, citrus and a splash of cream. This version uses Dr Pepper, coconut syrup, lime juice and half-and-half.

Can I make a dirty soda without coconut syrup?

Yes. Vanilla syrup or almond orgeat gives a similar creamy, nutty flavour, though the classic dirty-soda taste is coconut.
