Method

  1. Heat the oven to 350°F (180°C, gas 4) and grease a 9x13-inch baking dish.
  2. Unroll one can of crescent dough, press it into the bottom of the dish, and pinch the seams together to seal.
  3. Beat the cream cheese, 3/4 cup of the sugar, the egg and the vanilla until completely smooth, then spread it evenly over the dough.
  4. Unroll the second can of dough, lay it over the filling, and gently press the seams together.
  5. Brush the top with the melted butter.
  6. Mix the remaining 1/4 cup sugar with the cinnamon and sprinkle it generously over the top.
  7. Bake for 28 to 30 minutes, until golden and puffed, then cool completely before cutting into 16 bars.

Chef notes

Seal the crescent seams well so the filling cannot leak out at the edges. For the cleanest cuts, chill the cooled bars for 30 minutes before slicing; chilling is extra time on top of the 15 minutes prep and 30 minutes baking.

Substitutions

  • Crescent roll dough — puff pastry sheets, rolled thin and cut to fit the dish
  • Cream cheese — mascarpone, for a richer filling
  • Granulated sugar — a 1:1 baking sugar substitute, for the filling only

Serving suggestions

Serve at room temperature or chilled, with coffee, hot chocolate, or a scoop of vanilla ice cream.

Storage

Airtight container in the fridge for up to 5 days.

Reheating

Best served cold or at room temperature; warm single bars in the microwave for 10 seconds only, if wanted.

Equipment

  • 9x13-inch baking dish
  • Electric mixer or whisk
  • Spatula

Variations

  • Chocolate: spread 1/2 cup chocolate hazelnut spread over the bottom dough before adding the filling
  • Dulce de leche: drizzle 1/4 cup dulce de leche over the filling before adding the top dough
  • Apple: scatter 1 cup thinly sliced apple over the filling for a churro-apple twist

Why it works

Crescent dough bakes into flaky layers that mimic a churro crust, while the sugar and cinnamon on top melt with the butter into a crackly coating. The egg in the filling sets the cream cheese so the bars slice cleanly once cool.
